TORONTO, ON – Habits Gastropub co-owners Michelle Genttner and Luís Martins have announced that the establishment will soon be rebranded to reflect the increasing popularity of the on-site nanobrewery that was launched in early 2015.
Set to be known as Folly Brewpub, the College Street bar and restaurant will also have a new food menu developed by chef Martins, with dishes designed to pair with the line-up of saisons, farmhouse ales, mixed fermentation beers and sours created by brewers Christina Coady and Chris Conway.
This change follows a recent increase in capacity for the brewery. “When we started,” Conway notes, “we were using a 1.5hL system in the kitchen with one single 2.5hL tank in the back room. Now we’ve grown to eight 2.5hL tanks, allowing us a weekly production of around 10hL in a newly renovated, open-concept brewery space.”
Folly has also received a manufacturing licence that will allow for the distribution of its beers to other licensed establishments, as well as take-home sales from a bottle shop that is planned to open next spring.
The official launch of Folly Brewpub will take place in October, with more details to be announced soon.
