TORONTO, ON – Toronto beer blog Bottomless Pint reports that a new brewpub is currently under construction in the east end of the city.
Rorschach Brewing is being founded by partners Matthew Reiner, Mohan Pandit, Chris Ristevski and Ben Ragan, with Reiner serving as brewmaster based on his eight years of homebrewing experience.
Set to be located at 1001 Eastern Ave. (previously French restaurant Le Papillon on the Park) on the western edge of Woodbine Park, the brewpub will feature a 10 barrel brewhouse with six fermenters and two bright tanks where Reiner will produce “craft beers that are complex and flavourful but also highly drinkable.”
The restaurant will be able to accommodate 70-80 guests on the main floor, and approximately 100 on a second floor patio, with a food menu focused on tapas-style dishes that are “meant for sharing and most importantly complementing the beer.” House-brewed beers and other beverages will be served, and a bottle shop selling beer for takeaway is planned, pending licencing approvals.
