TORONTO, ON – Ontario’s newest craft beer company is getting set to launch next week, with its inaugural beer to be available exclusively at one of Canada’s best beer-orientated restaurants.
Shillow Beer Co. comes from the team of brewmaster Jamie Shillow and her husband & company president Ben Shillow. Before studying and graduating from the Brewmaster and Brewery Operations Management Program at Niagara College, Jamie worked as a server at several of Toronto’s best craft beer destinations, including Bar Volo and beerbistro, while Ben was sommelier at high-end restaurants including Canoe and Auberge du Pommier.
Putting their past connections to good use, the pair are brewing their initial Shillow Beer products at the Niagara College Teaching Brewery under contract, and will be debuting their first beer at beerbistro, where it will be an exclusive house beer.
Sass on the Side Brown Ale was developed with input from beerbistro staff and managers, and is described as follows:
At 5.6% abv., Sass on the Side Brown Ale is a dark reddish-brown, medium-bodied beer, that intends to be complex yet approachable. A grain bill heavily dosed with Munich malt provides intense notes of toast and nuts, and is accented by earthy German hops. “This is a perfect style to compliment our beer-centric cuisine,” comments Beerbistro’s executive chef Michelle Usprech. “Brown ales are known for being incredibly food-friendly, and are also really great for cooking with.”
Sass on the Side will have it’s public debut at beerbistro next Tuesday October 7th, and will be available to order in 300 and 500 ml servings.
Following from Shillow in early 2015 will be the more widely distributed flagship Bitter Waitress Black IPA, with future brands planned to include “a couple of Belgian styles, a fruit beer, a porter, and a lager.”
