UXBRIDGE, ON – The Uxbridge Times Journal reports a brewery that has been in the works since early 2013 has finally locked down a location in Uxbridge, and intends to be up and running by this autumn.
Second Wedge Brewing – named after the town’s location on the second of four wedges of the Oak Ridges Moraine – is being established by the husband-and-wife team of Rob Garrard and Joanne Richter.
While the pair was originally looking at a former Sears store in the centre of downtown Uxbridge as a possible location, that plan didn’t come to pass, and they will now be setting up shop in a 5,000 square foot industrial space at 14 Victoria Street. Once open, the facility will include a 15 barrel brewhouse, a tasting room and a retail store.
As for what beers will be available, Richter tells the Times Journal that the brewery will “definitely be having India Pale Ales and darker beers like porters and stouts for the fall, but we’re also working on lighter fare for the summer months. The goal is to have interesting and unique flavour profiles but always keep the flavours in balance so we have very drinkable beers.”
