VICTORIA, BC – Category 12 Brewing has announced the latest in the Elemental Series, a series of limited run releases that the brewery uses to “create beers that reflect our commitment to experimentation and innovation.”
Category 12 Raw Ale is an experimental farmhouse ale described as follows:
This is an exceptional release for us, as no brewery in British Columbia has dared to tackle a commercial version of this ancient technique: Raw Ales (or Råøl) predate the availability of metal brewing vessels that allow the wort to be boiled. Instead, a combination of impeccable brewing methodology and temperature allow for stable, pasteurized beer to be created with a distinctive resulting flavour.
This is also the first beer to come out of our dedicated Brettanomyces program. Our Elemental Series Raw Ale is a several month long primary fermentation with Brett, subtly infused with red cedar from the workshop of Chris Paul, a local First Nations artist who also contributed to our label art. Refermentation in the bottle adds another layer of complexity to this offering.
Category 12 Raw Ale is available now in a limited run of 750 ml bottles at the Category 12 brewery store, and select craft beer friendly liquor retailers in BC while supplies last.
