VANKLEEK HILL, ON – Halcyon Barrel House – the off-shoot of Beau’s All Natural Brewing dedicated to mixed fermentation and barrel-aged beers – has announced the launch of a series of limited edition releases based around a new sour golden ale called Shifting Sands.
Shifting Sands: Peach (7% abv) was released just before the holidays, and is described as follows:
Shifting Sands: Peach is a sour golden ale that had more than 500 kg of fresh peaches added to the oak foeder it was fermented and aged in. It was left to mature three months, with the intention of drying out the initial sweetness added by the fruit. The aroma has a fruity tang to it, with peach skins and light wine-like notes. Tastes tart and fruity, the peach character is soft but present.
Shifting Sands: Peach is available in 750 ml corked & caged bottles at the Beau’s retail store while supplies last.
Additional instalments in the Shifting Sands series, each of which “will have a different treatment of varieties of fruit, and will re-ferment and age in barrels or foeders,” will be announced and released as they are ready.
