BURLINGTON, ON – Nickel Brook Brewery has announced full details of the the latest edition in its monthly Funk Lab series of sour and barrel-aged beers.
Uncertainty Principle No. 1 (6.5% abv) is described as follows:
Uncertainty Principle No. 1 is a culmination of multiple souring and fermentative procedures including Kettle Souring, Primary Brettanomyces Fermentation, and Fruit Addition in a stainless tank, and Mixed Culture Fermentation and Souring in an oak barrel. In total it is the culmination of 2 years of brewing and ageing in order to get the character to the level of depth and complexity that our brewers were searching for. Pouring a brilliant hazy golden/orange hue, the aroma bursts with a Tropical Medley of Mandarin Oranges, Mango, and Pineapple, surrounding a core of acetic acid and Funk. Hints of light floral tones tease the palate as punchy notes of Mandarin Orange, Pineapple, and crushed Mango greet your taste buds on the finish. Lactic and Acetic acid blend together seamlessly, creating a deep character which adds layer after layer of complexity.
