VANKLEEK HILL, ON – Halcyon Barrel House – an off-shoot of Beau’s Brewing dedicated to mixed fermentation and barrel-aged beers – has announced two new releases.
Rheasilvia (7.3% abv) is described as follows:
A blend of two bière de garde recipes brewed a year apart, in Dec. 2017 and Dec. 2018. It is fermented in red wine barrels with saison yeast and Halcyon’s house mixed culture. Flavour notes are sherry and ripe fruit, with full carbonation, light acidity and restrained bitterness.
Gravity Well Cherry (9% abv) is a variant on Halcyon’s Gravity Well Flanders-style red ale, and has the following notes:
We added both tart and sweet varieties of organic cherries to a blend of Gravity Well, Halcyon’s award-winning organic sour ale, back in 2018. The result of our years of patience is Gravity Well Cherry. The tandem of the acidity playing off the subtle caramel malty sweetness keeps each in check.
Both beers are available now in 750 ml bottles at the Beau’s retail store.
