TORONTO, ON – Bellwoods Brewery has announced return of a beer originally brewed in 2018 as a collaboration with Belgium’s Brasserie de la Senne.
Come What May (5.6% abv) is a “Foeder Aged Hoppy Brett Beer” described as follows:
How do you create a “Saison” without saison yeast? was the question we started with, and Come What May is our response. For us, it’s a beer defined by oak foeder aging, rustic grains to mimic farm availability, wild yeast and bacteria to add subtle acidity, and assertive hopping for firm bitterness. It’s an absolutely radiant, under-the-radar sort of beer that we’re proud to have made (and ecstatically consuming).
Come What May is available in both original and dry-hopped versions at both Bellwoods retail stores and the brewery’s online shop.
