OTTAWA, ON – Dominion City Brewing has announced the release of a pair of well-aged, bottle-conditioned saisons.
Eudaimonia (4% abv):
A table beer, of sorts – dry-hopped with Citra – Eudaimonia is a mixed culture beer fermented in stainless for one year and refermented in the bottle. This bottle recalls a glass of Summer lemonade, showcasing lively acidity, subtle complexity and a dry, refreshing finish. Like its namesake, this beer encourages us to trust that many of life’s most worthwhile projects are often at odds with contentment, but remain worthy of pursuit.
Northfield (6.5% abv):
Northfield #7 was bottled November 2021 after a year spent making its home in our oak foeder (large wooden fermentation vessel). Fermented with Brettanomyces and Saison yeast, this bottle-conditioned treat was brewed with 100% Barn Owl malted barley and wheat, Ontario & Quebec-grown Cascade from Hayhoe Hops and Houblonniere Lupuline.
Eudaimonia and Eudaimonia are available now at the Dominion City retail store and online shop.
