HAMILTON, ON – Collective Arts Brewing has announced the latest release in its Wild Sour series of barrel-aged sour ales.
Cabernet Sauvignon Wild Sour (7.5% abv):
Using a Brett strain to highlight the pineapple and peaches from our golden sour base, the challenge was to balance these flavours with local Ontario wine grapes of opposing character. Looking for a red grape with high tannin and medium balanced acidity, we landed on Cabernet Sauvignon – a varietal that grows exceptionally well in our local climate. Using only the skins, we added golden sour with moderate oak character and found the sweet spot. Up front, the pineapple hits first with a light warming spice. The light body and high carbonation make the cherry and sweet stone fruit notes pop. Tannins linger for a short while and end with the balance of spice and sweet fruit.
