CALEDON, ON – Sonnen Hill Brewing has announced the release of a new collaboration with Bellwoods Brewery.
A Helles (5% abv):
We wanted to make a traditional German Helles with authentic ingredients as well as some German brewing techniques that we’ve never tried out before. It turned into a really great beer that drinks super clean and smooth. There are flavours and aromas of bready and nutty malt, a touch of floral hop character, and low bitterness without seeming sweet.
The ingredients used in A Helles are pilsner malt and a touch of Vienna malt, spalter select hops and a new to us lager yeast that originated from our favourite German helles producer. Some of the traditional German techniques that we used were decoction mashing (boiling the mash) and natural carbonation through krausening (lagering with freshly fermenting beer).
